Using R  start the data analysis using simple frequencies (number infected in orange county, hospitalized, died, etc.) and summary statistics (e.g., mean age and standard deviation). Then use chi-square analysis for bivariate associations (e.g., gender by death) also compare the months that had more patients being hospitalized and those that died to the month of March. And show the odds ratio and logistic regression of that data. When you use logistic regression, first use the unadjusted odds ratios then find the adjusted odds ratios.
